hellfish Purification System

hellfish Purification System

A shellfish purification system (also called a depuration system) is an installation designed to remove microbiological contaminants and impurities from shellfish (such as oysters, mussels, clams) before they are sold or consumed.

How it Works:
Shellfish, which are filter feeders, are placed in tanks of clean seawater — often sterilized and monitored — for a defined period (typically 12 to 48 hours). During this time, they naturally purge bacteria, viruses, and sediments from their bodies.

Main Components:

  1. Depuration tanks or basins:

    • Made of stainless steel, food-grade plastic, or concrete.

    • Size varies depending on the volume of shellfish.

  2. Water circulation system:

    • Natural or artificial seawater, sterilized by UV or ozone.

    • Controlled flow or recirculation.

  3. Disinfection system:

    • UV lamps or ozonation to eliminate pathogens.

    • Continuous water quality monitoring.

  4. Parameter control:

    • Temperature, salinity, pH, dissolved oxygen.

    • HACCP compliance and full traceability.

Benefits:

  • Ensures shellfish are microbiologically safe.

  • Meets EU and international health standards.

  • Enhances product taste and quality.

  • Allows direct marketing after treatment.
